Lavender honey from Provence (Gordes), France. Honey is harvested as a liquid and is composed primarily of fructose, glucose, maltose and sucrose. All honey crystallizes: varieties high in glucose, such as linden (lime blossom), lavender and sunflower, crystallize more quickly and often become creamy, while honeys higher in fructose (for example acacia, chestnut and honeydew) remain liquid longer. Crystallization is a natural process and an indicator of quality; crystallized honey can have a longer shelf life. Beekeepers may gently heat unevenly crystallized honey to return it to a liquid state, but excessive heating can reduce nutritional value and create a thin, watery texture.
